Green Cabbage Slaw with Sumac
INGREDIENTS
green cabbage, thinly sliced
persian cucumber, sliced
tomatoes, diced
parsley, dill, and/or mint, chopped
sumac
dijon mustard
red wine vinegar
olive oil
salt
pepper
METHOD
Place sliced cabbage, cucumber, tomato, and herbs in a large bowl.
In a small bowl or jar, prepare dressing - add a small spoonful of mustard, 2 tablespoons red wine vinegar, 3-4 tablespoons olive oil, salt, and pepper. Mix/shake well. Taste and adjust for seasoning.
Pour dressing over the salad and sprinkle with plenty of sumac. Toss. Taste and adjust for seasoning. Enjoy!
