Green Curry

INGREDIENTS

1 onion, diced

1.5 tablespoons coconut oil

3 large cloves of garlic, finely chopped

2-inch knob of ginger, peeled and finely chopped

1 head of cauliflower, cut into florets

3 carrots, peeled and cut into circles or diced

2 tablespoons green curry

1 cup water

1 can of coconut milk

1 tablespoon fish sauce

2-3 teaspoons soy sauce 

1 teaspoon coconut sugar (optional)

Cilantro, chopped

2-3 handfuls of spinach 

Salt

Pepper

Lime 

Add-ins: eggplant, zucchini, broccoli, tofu, chickpeas, shrimp


METHOD

Heat up coconut oil in a large pot or dutch oven. Add in diced onion and sauté until translucent. Then, add in garlic and ginger. Sauté for a couple more minutes.

Add in cauliflower, carrots, and green curry. Season with salt and pepper. Mix well.

Add in water, coconut milk, fish sauce, soy sauce, and coconut sugar (if using). Bring to a boil and then lower to a simmer.

Once cauliflower is tender, add in spinach, cilantro, and lime. Taste and adjust for seasoning.

Garnish with more cilantro and lime. Serve with rice.
