Hearts of Palm Ceviche

INGREDIENTS

Hearts of palm, drained, rinsed, and cut into cubes

Red onion, thinly sliced

Persian cucumber, diced

Grapefruit, diced

Cilantro, chopped

Fresno chili or jalapeno, finely chopped

Avocado, diced

Salt

Pepper

Lime juice

Olive oil

Serve with blue corn tortilla chips


METHOD

Combine all ingredients in a bowl. Mix well.

Taste and adjust for seasoning. Enjoy!
