Green Goddess Salad

INGREDIENTS

romaine lettuce, chopped well

green/napa cabbage, chopped well 

persian cucumber, diced

scallion, thinly sliced 

cooked chickpeas

pickled fresno chili

1/2 avocado 

1 small garlic clove

1 tablespoon chopped scallion

1 cup herbs (I used basil and tarragon)

juice of 1/2 lemon

1 tablespoon or more rice wine vinegar

3 or more tablespoons olive oil 

salt

pepper 

red chili flakes 

water 


METHOD

  1. combine romaine, cabbage, cucumber, scallion, chickpeas, and fresno chilis in a bowl.

  2. blend avocado, garlic, scallion, herbs, lemon juice, rice vinegar, olive oil, salt, pepper, and chili flakes together. add water to thin it out a bit. taste and adjust for seasoning.

  3. toss dressing with salad and eat with @traderjoes cassava chips:)
