Quinoa Veggie Stir-Fry

INGREDIENTS

cooked quinoa

veggies (shiitake mushrooms, tomatoes, kale)

olive oil

salt

pepper

fresh basil

parsley

parmesan

top with sauerkraut, avocado, chickpeas, tofu, and/or fried egg


METHOD

  1. sauté whatever veggies you have in olive oil and red chili flakes.

  2. add in quinoa, fresh basil, and parsley, salt, pepper, a lots of parmesan.

  3. top it with @hawthornevalley sauerkraut. avocado, chickpeas, tofu, or a fried egg are also wonderful additions.
