Ground Turkey Taquitos

INGREDIENTS

8-10 siete almond tortillas or flour tortillas

shredded mozzarella cheese (optional)

1/2 red onion, diced

olive oil

1 large clove of garlic, chopped

1 small zucchini, julienned (optional)

1 pound ground turkey

2 teaspoons cumin

2 teaspoons chili powder

1/2 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/4 - 1/2 teaspoon turmeric

salt

pepper

1 teaspoon arrowroot mixed with 1/2 cup water

lime

cilantro, roughly chopped


METHOD

Preheat oven to 400 degrees F convection of 425 degrees F regular.

Heat up oil in a large pan and sauté onion until translucent. Add in garlic and zucchini and cook for a few minutes. Then add in ground turkey, cumin, chili powder, paprika, garlic powder, turmeric, salt, and pepper. Use a wooden spoon to break up meat.

Once turkey meat is almost cooked through, add in arrowroot-water mixture and simmer.

Heat up tortillas in the microwave or on the stove.

Spoon some of the turkey onto the tortilla and sprinkle cheese (optional). Wrap well. Place on a parchment-lined baking sheet, seam side down. Repeat with the rest of the tortillas.

Brush a little olive/avocado oil on the top of each taquito and bake in the oven for 15-20 minutes or until taquitos are golden.
