Herby Quinoa + Chickpea Chopped Salad

INGREDIENTS

Herby quinoa and chickpeas (if preparing this recipe, you can omit the step of adding dressing to the cooked quinoa and chickpeas)

Lettuce (I finely chopped green cabbage, radicchio, + spinach)

Tomatoes, diced

Crumbled feta (I like sheep’s or goat’s milk feta; omit to make vegan or use a vegan alternative)

My go-to salad dressing


METHOD

  1.  Place all ingredients in a bowl. Toss with dressing.

  2. Taste and adjust for seasoning. Enjoy!
