Homemade Basil Pesto

INGREDIENTS

6 cups fresh basil leaves

1/2 cup toasted nuts (I used a combo of walnuts and pine nuts)

2 small cloves of garlic

3 tablespoons or more grated parmesan (optional)

Zest and juice from one lemon

1/2 cup plus more olive oil

Salt and pepper to taste

METHOD

  1. In a food processor, combine basil, nuts, garlic, parm (if using), lemon zest, lemon juice, salt, and pepper. Pulse a couple of times.

  2. Slowly stream in olive oil while pulsing. Once the mixture is creamy, taste and adjust for seasoning.

  3. Store in an airtight container, cover with olive oil, and refrigerate. ENJOY!
