Lemon-Basil Hummus with Crispy Parmesan Chickpeas

HUMMUS INGREDIENTS

1 cup cooked chickpeas

1/4 cup or more tahini

2-3 tablespoons olive oil

1-2 cloves garlic

Zest and juice from a lemon

1/4 water

1 cup basil leaves

Pinch of red chili flakes

Sea salt (start with 1 teaspoon)

Black pepper

PARMESAN CHICKPEA INGREDIENTS

1 cup cooked chickpeas

Olive oil

Sea salt

Garlic powder

Onion powder

Smoked paprika

Pepper

Lemon zest

Lemon juice

Grated parmesan

METHOD

  1. Prepare the crispy parmesan chickpeas. In a bowl, combine chickpeas with olive oil, salt, garlic powder, onion powder, smoked paprika, pepper, zest from a lemon, lemon juice (just a squeeze), and as much parmesan as you like. Toss well. Air fry at 400 degrees for about 10 minutes or until golden and crispy.

  2. Prepare the hummus. In a blender or food processor, combine chickpeas, tahini, olive oil, garlic, zest and juice from a lemon, water, basil, chili flakes, sea salt, and pepper.

  3. Blend until creamy. Taste and adjust for seasoning.

  4. Top with parm chickpeas and serve with crudités and yummy crackers! Enjoy:)
