Israeli Breakfast Bowl

INGREDIENTS

chopped cucumber

chopped tomato

chopped endive

chopped herbs such as parsley, mint, dill, and cilantro

lemon juice or red wine vinegar 

olive oil

salt

pepper

egg

feta

zaatar 

hot sauce

pita, tortilla, or bread 

METHOD

  1.  combine cucumber, tomato, endive, and herbs in a bowl and season with lemon, olive oil, salt, and pepper. toss well.

  2. bring a pot of water to a boil and gently add in eggs. simmer for 6.5 minutes. drain water, run egg under cold water or place in an ice bath, peel, and cut in half.

  3. serve egg with salad and bread and top with crumbled feta, olive oil, zaatar, flakey salt, pepper, and hot sauce. enjoy:)
