Kale + Quinoa Tabbouleh

INGREDIENTS

Curly kale, ribs removed and leaves finely chopped

Persian cucumber, diced

Cherry tomatoes, quartered

Cooked quinoa

Finely chopped fresh herbs such as mint, parsley, dill, and/or cilantro

Feta cheese, crumbled

Lemon juice

Olive oil

Fine grain sea salt

Black pepper

Protein of your choice such as salmon, chicken, chickpeas, or tofu

METHOD

  1. In a large bowl, combine chopped kale*, cucumber, tomatoes, quinoa, herbs, and feta. Add a big squeeze of lemon, drizzle of olive oil, salt, and pepper. Toss well. Taste and adjust for seasoning.

  2. Serve with protein of your choice and enjoy!

*To soften the kale and make it easier to digest, massage with a drizzle of olive oil before adding in the other ingredients.
