Kale + Radicchio Salad with Dates and Pepitas

INGREDIENTS

  • Curly kale, finely chopped (or dino/lacinato kale, thinly sliced)

  • Radicchio, thinly sliced

  • Carrot, julienned (I used this peeler to julienne)

  • Pumpkin seeds or sunflower seeds

  • Dried fruit such as chopped dates, dried cranberries, or golden raisins

  • Finely chopped herbs such as mint, dill, and/or parsley

  • Cooked quinoa and/or chickpeas (optional)

  • For the dressing: eyeball dijon mustard, apple cider vinegar, maple syrup/honey, olive oil, salt, pepper, garlic (optional)

  • Serve with protein of your choice such as salmon, chicken, tofu, or tempeh

METHOD

  1. Add all the kale to a bowl and add a drizzle of dressing. Use your hands to massage the dressing into the kale.

  2. Then, add the rest of the ingredients and add some dressing. Toss well and enjoy!
