Kale + Radicchio Salad with Dates and Pepitas
INGREDIENTS
Curly kale, finely chopped (or dino/lacinato kale, thinly sliced)
Radicchio, thinly sliced
Carrot, julienned (I used this peeler to julienne)
Pumpkin seeds or sunflower seeds
Dried fruit such as chopped dates, dried cranberries, or golden raisins
Finely chopped herbs such as mint, dill, and/or parsley
Cooked quinoa and/or chickpeas (optional)
For the dressing: eyeball dijon mustard, apple cider vinegar, maple syrup/honey, olive oil, salt, pepper, garlic (optional)
Serve with protein of your choice such as salmon, chicken, tofu, or tempeh
METHOD
Add all the kale to a bowl and add a drizzle of dressing. Use your hands to massage the dressing into the kale.
Then, add the rest of the ingredients and add some dressing. Toss well and enjoy!
