Hearts of Palm, Cucumber, and Tomato Salad

INGREDIENTS

  • Hearts of palm, sliced

  • Persian cucumber, cut into half moons or diced

  • Cherry tomatoes, halved

  • Basil, chopped

  • Cooked chickpeas

  • Feta or avocado (optional)

  • For the dressing: eyeball dijon mustard, apple cider vinegar, maple syrup/honey, olive oil, salt, pepper, garlic (optional)

  • Serve with protein of your choice such as salmon, chicken, tofu, or tempeh

METHOD

  1. Add all the ingredients to a bowl and add some dressing. Toss well and enjoy!
