Hearts of Palm, Cucumber, and Tomato Salad
INGREDIENTS
Hearts of palm, sliced
Persian cucumber, cut into half moons or diced
Cherry tomatoes, halved
Basil, chopped
Cooked chickpeas
Feta or avocado (optional)
For the dressing: eyeball dijon mustard, apple cider vinegar, maple syrup/honey, olive oil, salt, pepper, garlic (optional)
Serve with protein of your choice such as salmon, chicken, tofu, or tempeh
METHOD
Add all the ingredients to a bowl and add some dressing. Toss well and enjoy!
