Kale Salad with Celery, Apple, Manchego, and Dates
INGREDIENTS
chopped curly kale
thinly sliced celery
julienned apple
julienned manchego cheese (or shaved parmesan)
thinly sliced dates (or dried cherries/cranberries)
roasted almonds
1 teaspoon dijon mustard
2 tablespoons lemon juice
1 tablespoon sherry vinegar
2 tablespoons olive oil
drizzle of honey or maple (optional)
salt
pepper
METHOD
In a bowl, whisk together mustard, lemon juice, sherry vin, olive oil, honey, salt, and pepper. you can add garlic and/or shallot, if you like. Taste and adjust for seasoning depending on how tangy you want it.
Add kale to a bowl and spoon over some dressing. use your hands to massage the dressing into the kale. Let it sit for 5 minutes.
Toss in celery, apple, manchego, dates, and almonds. also like adding quinoa if i have on hands add some more dressing and toss well. Taste and adjust for seasoning. enjoy:)
