Leftover Chicken Teriyaki-ish Salad

INGREDIENTS

  • Leftover chicken teriyaki, sliced

  • Leftover broccoli, green beans, and rice

  • Salad greens

  • Additional veggies such as persian cucumber, cabbage, carrot (optional)

  • Diced avocado (optional)

  • Mint and/or cilantro, roughly chopped

  • Microgreens for garnish

  • Coconut aminos

  • Rice vinegar

  • Toasted sesame oil

  • Sriracha

METHOD

  1. In a large bowl, combine your salad greens, raw veggies, roasted veggies, herbs, rice, and avocado if using.

  2. In a small bowl, prepare the dressing. Whisk together coconut aminos, rice vinegar, toasted sesame oil, and sriracha. Just eyeball everything, taste and adjust for seasoning.

  3. Pour some dressing over the salad and mix well. Top with sliced chicken and micro greens. Enjoy!
