Pasta with Lentils and Herbs

INGREDIENTS

cooked lentils (recipe here)

tomatoes, chopped

parsley, chopped

basil, chopped

olive oil

garlic, finely chopped (optional)

red chili flakes (optional)

lemon zest

lemon juice

salt

pepper

cooked pasta


METHOD

Heat up oil in a pot/small dutch oven. Add garlic, chili flakes, and tomatoes. Sauté until tomatoes just begin to soften.

Add in cooked lentils and cook for a few minutes and then add in cooked pasta, lemon zest, lemon juice, salt, pepper, parsley, basil, and more oil, if needed.

Taste and adjust for seasoning.
