Mustard-Maple Rutabaga

INGREDIENTS

1 rutabaga, peeled and cut into small cubes

garlic-infused olive oil

1 tablespoon mustard (I used a combo of dijon and grainy mustards)

1-2 teaspoons maple syrup

squeeze of lemon

salt

pepper

oregano

red chili flakes

METHOD

Preheat oven to 400 degrees F convection or 425 degrees regular.

Place chopped rutabaga on a parchment-lined baking sheet and toss with olive oil, mustard, maple, lemon, salt, pepper, oregano, and red chili flakes.

Roast until tender and crispy, about 20-25 minutes, mixing occasionally.
