Peanut Butter Chip Bliss Balls

makes ~20 balls

INGREDIENTS

1 cup of pitted medjool dates

Heaping 1/2 cup rolled oats

Heaping 1/4 cup peanut butter

1 tablespoon chia seeds

1 tablespoon hemp seeds

1 tablespoon cacao nibs

2 tablespoons ground flaxseeds

2 tablespoons pumpkin seeds

Splash of vanilla extract

1/4 teaspoon fine grain sea salt

1/4 cup dark chocolate chips

METHOD

  1. Place 1 cup of pitted dates in a small bowl. Cover with warm water for 5 minutes and then drain.

  2. Place drained dates in the food processor fitted with an s-blade. Process the dates until they are pretty smooth.

  3. Add a heaping 1/2 cup rolled oats, heaping 1/4 cup peanut butter, 1 tablespoon chia seeds, 1 tablespoon hemp seeds, 1 tablespoon cacao nibs, 2 tablespoons ground flaxseeds, 2 tablespoons pumpkin seeds, a splash of vanilla extract, and 1/4 teaspoon sea salt. Process until well combined. If the mixture does not stick together, add one tablespoon of water and process again. Taste and adjust. For me, the mixture was slightly sweeter than I wanted it to be, so I added additional mix-ins (see step 4).

  4. Then, add in 1/4 cup dark chocolate chips. I also added another 2 tablespoons of oats and 1 tablespoon of pumpkin seeds. I processed just to combine the additional ingredients but still wanted some larger chunks.

  5. Roll into approximately 20 balls and store in the fridge. Enjoy!
