Plant-Based Quesadilla Bowl

INGREDIENTS

for the quesadilla:

tortilla (I use Siete cassava or almond flour tortilla)

refried black or pinto beans (recipe for my homemade pinto beans here)

grated cheese (optional)

for the bowl:

quesadilla

simple romaine, cilantro, and radish salad

guacamole

sour cream

pickled chilis

spicy honey cauliflower

METHOD

  1.  spread refried beans on half of a tortilla. if you’re using cheese, sprinkle over the beans.then, fold top half over bottom half and lightly press down.

  2. coat a pan with avocado oil and heat up. add quesadilla to the pan. once the underside is golden, flip and cook for a few more minutes. cut in half.

  3. serve with salad, cauliflower, guacamole, sour cream, and pickled chilis. enjoy!
