Plant-Powered Tofu Nourish Bowl

BOWL COMPONENTS

Baked tofu (or tempeh, chickpeas, salmon, chicken, etc.)

Soba noodles (or kelp noodles, sweet potato glass noodles, or rice)

Romaine lettuce, thinly sliced

Purple cabbage, thinly sliced

Cucumber, thinly sliced

Steamed/roasted veggies (broccoli, cauliflower, carrots, Bok Choy, zucchini)

Creamy sesame dressing

To garnish: cilantro, scallion, avocado, sesame seeds and/or seaweed

TOFU INGREDIENTS

16 oz block of high protein tofu

1 tablespoon tamari or soy sauce

1 tablespoon coconut aminos

squeeze of sriracha (optional)

1 tablespoon sesame oil

Splash of rice vinegar (optional)

1 teaspoon garlic powder

1 teaspoon onion powder

pinch of black pepper

1 tablespoon arrowroot powder

DRESSING INGREDIENTS

1/4 cup runny tahini

2 tablespoons soy sauce

2 tablespoons coconut aminos

1 tablespoon + 1 teaspoon rice vinegar

3 teaspoons lime juice (or just use more rice vinegar)

1 tablespoon + 1 teaspoon sesame oil

1-2 teaspoons maple syrup

Chili flakes or sriracha

1/2-1 teaspoon grated ginger

1 clove of garlic, grated

METHOD

  1. Prepare the tofu. Preheat oven or air fryer to 400 degrees F and line a large baking sheet with parchment paper. Cut tofu into cubes - first, cut the tofu in half lengthwise. Stack the halves on top of each other  and then slice them to make 5-6 columns. Slice across to make 3 rows. Cutting method depends on the shape of the tofu block.

  2. In a large bowl, combine soy sauce, coconut aminos, sesame oil, sriracha, rice vinegar, garlic powder, onion powder, and pepper. Whisk well.

  3. Add tofu cubes to the bowl and gently toss with your hands. Then, add the arrowroot powder and toss again until no powdery spots are visible.

  4. Marinade for 30 minutes (optional).

  5. Place tofu on the baking sheet and bake for 25-35 minutes or until golden brown.

  6. While tofu cooks, prepare the dressing. Combine all dressing ingredients in a bowl. Whisk well. Taste and adjust for seasoning.

  7. Assemble bowl. Place lettuce, cabbage, noodles, vegetables, and tofu in a bowl. Add dressing and garnishes of your choice. Enjoy!
