Summer Corn, Tomato, and Basil Salad

INGREDIENTS

fresh ears of corn, kernels removed

cherry tomatoes, halved

basil, torn and/or julienned (I did both for more texture)

scallion or red onion, finely chopped

optional add-ins: finely chopped fresno chili or jalapeño, avocado, edamame, cilantro

lemon juice

olive oil

garlic, minced (optional)

sea salt

pepper

METHOD

  1. Combine corn, tomatoes, basil, onion, and any additional ingredients in a large bowl. Gently toss everything together.

  2. In a small bowl or mason jar, combine lemon juice, olive oil, garlic, salt, and pepper. I like to do equal parts acid and oil for this salad but if you like a tangier dressing add more lemon. Shake well. Taste and adjust for seasoning.

  3. Add some dressing to the salad. Toss well. Taste and adjust (does it need more dressing, more salt, more basil?) Enjoy!
