Smoky Pomegranate Tahini

INGREDIENTS

2 tablespoons runny tahini (I like the one from Trader Joe’s)

1 tablespoon lemon juice

1 teaspoon olive oil

1-1.5 teaspoons pomegranate molasses (depending on how sweet you like it)

1 clove garlic, minced (omit for low-fodmap)

1/4 teaspoon smoked paprika

salt

pepper

2-3 tablespoons water

METHOD

Combine all ingredients except for water in a small bowl and whisk well.

Add 1 tablespoon of water at a time until desired consistency is reached. Taste and adjust for seasoning.
