Chocolate-Covered Pumpkin Bliss Balls

INGREDIENTS

1/2 cup nuts (such as pecans, walnuts, almonds, cashews)

1 Tbsp rolled oats

2 Tbsp pumpkin seeds

3-4 large pitted dates

2 Tbsp pumpkin purée (not pumpkin pie filling)

½ teaspoon vanilla extract

1 teaspoon cinnamon

dash of ground cardamom (optional)

dash of ground ginger (optional)

1/8 teaspoon salt

melted dark chocolate

flakey sea salt, chopped pumpkin seeds, chopped pecan for garnish (optional)

METHOD

Place all ingredients into a food processor and pulse until a sticky dough forms. Taste and add more dates, nuts/seeds, and/or pumpkin if necessary.

Use your hands to roll the dough into bite-sized balls.

Dip balls into melted chocolate using two forks and allow excess chocolate to drip off. Place on a parchment-lined surface.

Refrigerate until chocolate has completely set

Store in an airtight container in the refrigerator.
