Roasted Eggplant, Yellow Squash, + Zucchini
INGREDIENTS
2 baby eggplants or 1 Italian eggplant, chopped
1 yellow squash, chopped
1 zucchini, chopped
Black pepper
METHOD
Preheat the oven to 425 degrees F and line a baking sheet with parchment paper.
Place the veggies on the baking sheet and drizzle with avocado oil. Season with salt and petter. Use your hands to toss well. Then, roast in the oven for 20-25 minutes or until the veggies are golden brown and tender. Enjoy!
