Salad-e Shirazi
INGREDIENTS
persian cucumbers, diced
cherry tomatoes, diced
radishes, diced
red onion, finely chopped or scallion (i omitted since i don’t tolerate raw onion well)
chopped parsley (you can add mint as well)
juice from one lemon
juice from one lime
3-4 tablespoons olive oil (depending on how tangy you want the salad to be)
1/2 teaspoon salt
1/4 teaspoon pepper
METHOD
in a large bowl, combine cucumber, tomato, radish, onion, and parsley.
in a mason jar, combine lemon juice, lime juice, olive oil, salt, and pepper. shake well. taste and adjust for seasoning.
pour enough dressing over the salad. toss. taste and adjust. enjoy:)
