Salad-e Shirazi

INGREDIENTS

persian cucumbers, diced

cherry tomatoes, diced

radishes, diced

red onion, finely chopped or scallion (i omitted since i don’t tolerate raw onion well)

chopped parsley (you can add mint as well)

juice from one lemon

juice from one lime 

3-4 tablespoons olive oil (depending on how tangy you want the salad to be)

1/2 teaspoon salt

1/4 teaspoon pepper 


METHOD

  1. in a large bowl, combine cucumber, tomato, radish, onion, and parsley.

  2. in a mason jar, combine lemon juice, lime juice, olive oil, salt, and pepper. shake well. taste and adjust for seasoning.

  3. pour enough dressing over the salad. toss. taste and adjust. enjoy:)
