Sautéed Green Beans with Shallot, Lemon, and Parsley

INGREDIENTS

olive oil

1 large shallot, thinly sliced 

2 large cloves of garlic, finely chopped 

pinch of red chili flakes (optional)

1 pound haricot verts

1/2 cup water 

salt

pepper 

zest from one lemon

lemon juice (optional)

chopped parsley 


METHOD

  1. heat up 2 tablespoons of olive oil in a pot or dutch oven.

  2. add shallots and sauté on medium until translucent. then, add in garlic and chili flakes, if using. sauté for a few more minutes.

  3. throw in green beans, 1/2 cup water, salt, and pepper. mix everything together.

  4. cover with the lid and cook for 15-20 minutes (tossing occasionally and adding more water if needed) or until green beans are tender but still have a slight crunch. add lemon zest and parsley. you can add a squeeze of lemon if you like!

  5. taste and adjust for seasoning. enjoy:)
