Salmon with Buckwheat Noodle and Broccoli Stir-Fry

INGREDIENTS

chopped onion and/or green onion

finely chopped garlic 

finely chopped ginger 

buckwheat noodles

broccoli florets 

soy sauce 

coconut aminos

sesame oil

harissa 

cilantro 

sesame seeds

salmon filet (I used Vital Choice wild salmon)

salt 

pepper

garlic powder 

honey


METHOD

  1. preheat air-fryer or oven to 400 degrees F. line a baking sheet with parchment paper. 

  2. bring a pot of water to a boil and season with salt. 

  3. in a small bowl, combine 2 teaspoons soy sauce with 1 teaspoon oil and 1 teaspoon honey. whisk well. 

  4. pat your salmon dry and place skin side down on baking sheet. season with salt, pepper, and garlic powder. pour marinade over salmon and set to the side.

  5. heat up oil in a pan. add in onion and sauté until translucent and slightly golden. 

  6. while onion cooks, add noodles to boiling water and cook for about 5 minutes or until al-dente. 6. while noodles cook, add in ginger and garlic to the onion. sauté for a few minutes.

  7. add broccoli to the pot with noodles and cook for about 2 minutes.

  8. drain noodles and broccoli and add to the pan.

  9. season with harissa, soy sauce, coconut aminos, sesame oil, cilantro, and sesame seeds. taste and adjust for seasoning.

  10. air fry salmon for about 10 minutes or until it’s cooked to your liking.

  11. plate it up and enjoy:)
