Savory Cottage Cheese Bowl

INGREDIENTS

cottage cheese  (I like Good Culture cottage cheese)

persian cucumber, chopped

avocado, cubed

mango, cubed

radish, thinly sliced

mint, torn

cilantro, roughly chopped

pickled fresno chili 

lime or lemon

olive oil 

flakey salt 

black pepper

serve with seedy crackers (recipe for my homemade gluten-free seedy crackers here) or toasted bread

METHOD

  1. In a bowl, layer cottage cheese, cucumber, mango, avocado, radish, mint, cilantro, and pickled chilis.

  2. Drizzle with olive oil, squeeze lime or lemon, and season with salt and pepper. Enjoy!
