Salted Chocolate Raspberry Granola Bark

INGREDIENTS

1.5 cups rolled oats 

1/4 cup pumpkin seeds

1/4 cup coconut flakes 

1/4 cup chopped walnuts 

2.5 tablespoons raw cacao powder (such as Navitas)

1/2 teaspoon cinnamon

3 tablespoons or more melted coconut oil

3-4 tablespoons maple syrup

1 teaspoon vanilla extract 

Dark/semi-sweet chocolate chips (as much as you want, I used a lot)

flakey sea salt 

freeze-dried raspberries or strawberries 

METHOD

  1. Preheat your oven to 300 degrees F. Line a baking sheet with parchment paper.

  2. In a bowl, combine oats, pumpkin seeds, coconut, walnuts, cacao powder, cinnamon, coconut oil, maple, and vanilla. Mix well. If the mixture seems too dry, add more oil. Taste for sweetness and adjust.

  3. Pour mixture into baking sheet and spread in an even layer. 

  4. Bake in oven for 20-30 minutes. Remove from oven and then oven off.

  5. Pour chocolate chips over granola and return baking sheet into turned off oven for a couple of minutes or until chocolate begins to melt.

  6. Stir the granola so chocolate coats everything. Sprinkle with flakey sea salt and then raspberries. Use your hands or a spoon to press raspberries into granola.

  7. Freeze for a few hours or overnight. Break into pieces and enjoy! Store in the freezer or refrigerator.
