Sweet and Spicy Eggplant

INGREDIENTS

1 large eggplant, peeled

2 tablespoons olive oil

1 tablespoon pomegranate molasses

2 teaspoons honey

1/2 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon cumin

1/4 teaspoon turmeric

Salt

Pepper

1/2 -1 teaspoon harissa 

garnish with fresh herbs like dill or cilantro, yogurt sauce, or tahini drizzle

METHOD

  1. Preheat oven or air fryer to 425 degrees F. Line a baking sheet with parchment paper.

  2. Cut eggplant in half and then cut each half in half and each quarter in half again. Place on baking sheet.

  3. In a small bowl, whisk together oil, pomegranate molasses, honey, spices, salt, pepper, and harissa.

  4. Brush glaze on all sides of the eggplant.

  5. Roast for about 30 minutes, or until eggplant is tender, flipping halfway.

  6. Serve with yogurt sauce or tahini drizzle and herbs.
