Salted Date Caramel Matzo Bark

INGREDIENTS

matzo 

melted chocolate (I used dark chocolate)

flakey sea salt

1/2 cup pitted dates, diced 

boiling water 

1/4 cup runny tahini (I used Trader Joe’s)

1 teaspoon vanilla extract 

3 tablespoons milk (I love coconut or almond))

1/8 teaspoon cinnamon

dash of cardamom

sea salt 


METHOD

  1. Place chopped dates in a bowl. Pour hot water over chopped dates to soften them for about 5 minutes. Drain water from dates.

  2. In a small pot, combine tahini, dates, 1 teaspoon vanilla, milk, cinnamon, cardamom, and dash of salt. 3. Turn on the heat and use a fork to mash the dates. Whisk over low-medium until for a few minutes or until creamy.

  3. Transfer to a bowl or Tupperware and allow to cool.

  4. Spread a thick layer of cooled caramel onto a matzo. Drizzle with a generous amount of melted chocolate and use a spoon or spatula to spread the chocolate over the caramel. Sprinkle with flakey salt. Place in the freezer or fridge to set the chocolate. Break into pieces and enjoy:)
