Seedy Oatmeal

serves 2

INGREDIENTS

1 cup rolled oats

1/2 banana, mashed

1 cup coconut water

1-1.5 cups almond milk

1 teaspoon vanilla extra

1/4 teaspoon or more cinnamon

dash of salt

1/2 cup frozen or fresh blueberries

2 teaspoons pumpkin seeds

2 teaspoons ground flax seeds

2 teaspoons chia seeds

2 teaspoons hemp seeds

METHOD

In a small pot, combine oats, banana, vanilla, salt, cinnamon, coconut water, and almond milk. Bring to a boil and then lower to a simmer.

Once oats have softened, add blueberries, pumpkin seeds, flax, chia, and hemp seeds. Taste and adjust for seasoning. If it’s too thick, add more liquid.

Serve with fruit, cacao nibs, nut butter, and more flax seeds!
