Sheet-Pan Salmon + Boy Choy

INGREDIENTS

two 6 oz filets of fish (I did salmon and chilean sea bass)

1.5 tablespoons soy sauce 

1.5 tablespoons coconut aminos

2 teaspoons sesame oil

1/2 teaspoon grated ginger of 1 teaspoon finely chopped ginger

1/4 teaspoon garlic powder

pinch of gochugaru/chili flakes or squeeze of sriracha/hot sauce

8 baby bok choy

*serve fish and bok choy with ginger-matcha rice or noodles, cabbage slaw, pickled daikon/carrots, cucumber, cilantro, avocado, furikake/nori

METHOD

  1. preheat oven to 425 degrees F and line a baking sheet with aluminum foil and parchment paper.

  2. in a container or bowl, combine soy sauce, coconut aminos, sesame oil, ginger, garlic powder, and gochugaru.

  3. place fish in the container and marinade for 5-30 minutes.

  4. arrange bok choy on the perimeter of the baking sheet and drizzle a bit of water over each one. place fish in the center. pour remaining marinade on the fish (optional).

  5. bake in the oven for 8-10 minutes or more spending on size/thickness of fish and your oven. 

  6. serve in a bowl with all the goods and a squeeze of lime. enjoy!
