Simple and Silky Hummus

INGREDIENTS

1/2 15 oz can cooked chickpeas, drained and rinsed

juice from a small lemon

2 tablespoons tahini

1 tablespoon olive oil

2-4 tablespoons ice water

1 small clove of garlic

1/2 teaspoon cumin

salt

garnishes: pomegranate seeds, sumac, herbs


METHOD

  1. Remove outer skin from chickpeas (optional).

  2. In a food processor, add chickpeas, lemon juice, tahini, olive oil, ice water, garlic, cumin, and salt. Blend until smooth and creamy (add more water and or lemon if hummus is too thick). Taste and adjust for seasoning.

  3. Transfer to a bowl and garnish with pomegranate seeds, sumac, and herbs.
