Herby Soft Scrambled Eggs & Maple-Glazed Bacon
serves 3-4
FOR THE EGGS
9 whole eggs
2 tablespoons freshly chopped dill
1 tablespoon finely sliced chives
1/2-1 stalk green onion, thinly sliced
1 tablespoon unsalted butter
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
freshly grated parmesan
METHOD
Crack eggs into a large bowl, whisk well and add salt and pepper
Heat a large skillet over low heat and then add butter and olive oil. Let it heat up for 1-2 minutes
Add the eggs into the skillet. Using a wooden spatula, continuously stir the eggs in a back-and-forth fashion. Reference the video below:
Once the eggs begin to come together, stir in the dill, chives, and green onion.
After the eggs reach the desired consistency, add grated parmesan.
FOR THE BACON
1 package organic uncured turkey bacon (or regular bacon)
maple syrup
METHOD
Preheat oven to 400-425 degrees
Arrange bacon on parchment-lined baking sheet
Brush maple syrup onto both sides of the bacon
Cook in oven for 15-25 minutes until bacon is brown and crisp
