Cottage Cheese Bowl with Stone Fruit, Berries, Mint, + Lime

INGREDIENTS

Cottage cheese or greek yogurt

Stone fruit such as nectarine, peach, and/or plum, diced

Raspberries, torn in half

Fresh mint, torn

Small squeeze of lime (+ lime zest, optional)

Almond butter or peanut butter

Drizzle of honey (optional)

Maple-roasted sunflower and pumpkin seeds

METHOD

  1. In a small bowl, combine stone fruit, raspberries, mint, lime juice, and lime zest. Mix.

  2. Add your cottage cheese or yogurt to a bowl. Then, arrange the fruit on top followed by the almond butter, honey if using, and seeds. Enjoy!
