Strawberry Coconut Bliss Balls

makes ~16 balls

INGREDIENTS

1 cup raw/dry-roasted cashews

5-6 medjool dates (depending on how sweet you want it)

1 cup freeze-dried strawberries plus more if you’re rolling the balls in them

1/4 cup coconut flakes

2 tablespoons coconut butter

Water

Pistachios (optional for garnish)

METHOD

  1. If you’re rolling the balls in freeze dried strawberries and/or pistachios, place the pistachios in the food processor and blend until a crumb forms. Place in a bowl. Then, place some strawberries in the food processor and blend until a powder forms. Place in a bowl. Set to the side.

  2. In the food processor, blend cashews until a crumb forms.

  3. Then, add in dates, 1 cup freeze dried strawberries, coconut flakes, coconut butter, and 1/2 tablespoon of water.

  4. Blend until a ball forms (add more water if needed).

  5. Roll into balls and then roll in strawberry dust and pistachios.

  6. Store in an airtight container in the fridge and enjoy!
