Sumac-Roasted Celery Root

INGREDIENTS

1 celery root, skin removed and cut into french fry sticks

1 tablespoon garlic-infused olive oil

2 teaspoons sumac

salt

pepper

sprinkle of cumin

sprinkle of turmeric

METHOD

Preheat oven to 400 degrees F convection or 425 degrees regular.

Place sliced celery root on a parchment-lined baking sheet and add olive oil, sumac, salt, pepper, cumin, and turmeric. Toss well.

Roast in oven until tender and golden.

Delicious with my smoky pomegranate tahini drizzle.
