Easy Peasy Green Rice

INGREDIENTS

  • 1/2 cup basmati rice

  • 3/4 cup water

  • 2 teaspoons plus more of olive oil

  • 1/4-1/2 teaspoon fine grain sea salt

  • fresh dill, chopped

  • frozen green peas

METHOD

  1. Rinse and drain rice in a pot 3-4 times or until water becomes more clear. Add 3/4 cup of water to rinsed rice.

  2. Place pot on stove and add 2 teaspoons olive oil and salt. Stir.

  3. Bring rice to a boil and then lower to a simmer.

  4. Once most of the water is absorbed, add in as much dill and frozen green peas as you like, and sprinkle in some turmeric. Stir.

  5. Add a drizzle of olive oil and a bit more water. Place the lid on the pot and cook until rice is tender.
