Sumac and Sesame Spiced Tofu

INGREDIENTS

1 14 or 15 oz block of tofu (I like the organic, sprouted extra firm tofu from TraderJoe’s)

1 Tbsp olive/avocado oil

1 Tbsp lemon juice

1/2 teaspoon maple syrup

1 teaspoon cumin

2 teaspoons sumac

heaping 1/8th teaspoon turmeric

1/2 teaspoon garlic powder

1 teaspoon sesame seeds

heaping 1/4 teaspoon salt

pepper

2 teaspoons arrowroot powder


METHOD

Preheat oven to 400 F with convection or 425 F.

Drain liquid from tofu and press for 30-60 minutes. Following pressing instructions from this tofu recipe.

While tofu is being pressed, prepare spice mix. Place oil, lemon juice, maple syrup, cumin, sumac, turmeric, garlic powder, sesame seeds, salt, pepper, and arrowroot powder in a small bowl and whisk until well combined.

Cut tofu in squares and place on a parchment-lined baking sheet. Pour spice mix over tofu and use your hands to gently coat the tofu. You can also do this in a bowl before placing tofu on the baking sheet. Evenly space the coated tofu on the baking sheet and let marinade for 10-15 minutes (optional).

Bake in the oven until tofu is slightly crispy, about 20-30 minutes depending on your oven.

Serve with vegetables of your choice, roasted sweet potatoes, herbed grains, and a lemony tahini dressing.
