Swiss Chard Pasta

INGREDIENTS

olive oil 

1/2 medium yellow onion, thinly sliced 

1 large clove of garlic, finely chopped

pinch of red chili flakes

1 big bunch rainbow chard, leaves removed from stems; stems thinly sliced and leaves roughly chopped 

1 bunch of parsley (parsley stems, sliced and 1/4 cup parsley leaves, finely chopped)

1/4 cup mint leaves, finely chopped

kosher salt

sea salt

black pepper

juice from 1/2 lemon or more

6 oz or more dry regular or gluten-free pasta (I used farfalle)

grated parmesan cheese (optional)

lemon zest 

METHOD

  1. bring a large of water to a boil and season with kosher salt.

  2. heat up 2 tablespoons of olive oil in a large sauté pan. add in the onion and sauté on medium until translucent. then, add garlic, chili flakes, stems of swiss chard, stems of parsley, and sea salt. sauté for 10 minutes or until onions are golden.

  3. add pasta to the boiling water and cook according to package instructions (I like it al-dente). reserve 1/4 cup pasta water in a cup/bowl. then, drain pasta.

  4. add swiss chard leaves, lemon juice, and pepper to the sauté pan. cook until it begins to wilt. add in drained pasta, parsley, mint, pasta water, and 1 or more tablespoons oil. toss well. taste and adjust for seasoning. salt? chili? lemon?

  5. serve with grated parmesan and lemon zest! enjoy:)
