Strawberry-Coconut Yogurt Bark

INGREDIENTS

1 cup coconut yogurt (I used Cocojune); can also use regular greek yogurt

4 small strawberries, sliced (any berry, pineapple, or banana are also delish)

Drizzle of maple or date syrup (optional)

Freeze dried strawberries

Melted chocolate

Flakey salt


METHOD

  1. In a bowl, combine coconut yogurt, sliced strawberries, and sweetener of choice. Stir well.

  2. Line a baking sheet with parchment paper and pour strawberry-yogurt mixture on top. Spread into an even thick layer.

  3. Top with freeze dried strawberries and freeze for 3 or more hours.

  4. Drizzle with melted chocolate and sprinkle flakey salt. Once chocolate hardens, cut into squares and enjoy:) Store leftovers in the freezer.
