The Best Roasted Brussels sprouts, Delicata Squash, + Cabbage

INGREDIENTS

Brussel sprouts, trimmed and halved

Delicata squash, cut in half crosswise, seeds removed, and then cut into half moons

Purple cabbage, sliced

Olive oil

Coconut aminos

Sea salt

Black pepper

Garlic powder

Onion powder

METHOD

  1. Preheat oven to 425 degrees F and line one to two large baking sheets (depending on the quantity of your veggies) with parchment paper.

  2. Divide the veggies amongst the baking sheets, making sure that the veggies are spread out and not on top of one another.

  3. Generously drizzle the veggies with olive oil and season with salt, pepper, garlic powder, and onion powder.

  4. I like to add coconut aminos to the cabbage. Separately toss each of the veggies and roast until golden brown, about 35-45 minutes. Enjoy!
