Toast with Nut Butter & Berry Sauce

One of my absolute favorite breakfasts - satisfying, full of different textures, and basically tastes like dessert

TOAST INGREDIENTS

1 slice of toast - I love Ezekiel Cinnamon Raisin Toast/English Muffin or a good sourdough

1-2 tablespoons of nut/seed butter - I’m a crunchy peanut butter kind-of-girl and only buy Santa Cruz Organic Peanut Butter

Sliced fresh fruit - banana, peach, kiwi, fig, apple, mango

Homemade berry sauce (optional)

Toppings - cacao nibs, coconut flakes, hemp seeds, cinnamon

BERRY SAUCE INGREDIENTS

makes ~ 1.5-2 cups of sauce

2 cups frozen/fresh mixed berries

1-2 tablespoons water

1-2 teaspoons maple syrup

1-2 teaspoons lemon juice

METHOD

Prepare the berry sauce (I like doing this the day before and keeping it in the fridge so that it thickens - it’s great on toast, oatmeal, overnight oats, chia seed pudding, and yogurt). Combine berries, water, maple syrup, and lemon juice in a small pot and cook over medium heat covered. Once it begins to bubble, lower the heat and cook until the berries are soft.

Toast your bread, spread on nut/seed butter, and arrange fruit. Top with berry sauce and toppings of your choice.
