Quick Tofu, Veggie, Noodle Stir-Fry

this is a no recipe kind of recipe, so just taste and adjust as you go:)

INGREDIENTS

olive oil 

extra-firm tofu, cut into cubes 

chopped vegetables such as broccoli, cabbage, zucchini, dark leafy greens

soy sauce

coconut aminos 

rice vinegar

sesame oil

harissa

salt

pepper

jap chae (sweet potato glass noodles)

garnish with cilantro, lime, sesame seeds, avocado, and kimchi 


METHOD

  1. Bring a pot of water to a boil and cook jap-chae for about ten minutes. Drain.

  2. In a large pan, heat up oil. Add tofu and let it cook for about five minutes. Toss in your veggies and season with salt and pepper. Sauté about five minutes, or until veggies are cooked to your liking.

  3. Add cooked noodles, soy sauce, coconut aminos, rice vinegar, sesame oil, and harissa. Stir together. Taste and adjust for seasoning. 

  4. Add garnishes and enjoy!
