Very Yummy Baked Oatmeal

INGREDIENTS

1 teaspoon baking power

1.5 teaspoons cinnamon

slightly less than 1/8 teaspoon cardamom (optional)

1/2 teaspoon salt

2 cups old-fashioned rolled oats

1/4 cup + a little more nuts, roughly chopped such as almonds, hazelnuts, walnuts, and pecans

1 egg

1/4 cup maple syrup

1.5 teaspoons vanilla extract

2 cups plant-based or regular milk

2 tablespoons of butter or coconut oil, melted

1.5 cups berries (I like blueberries and blackberries)

1.5 cups chopped apples and pears

sliced banana (optional)

coconut flakes (optional)

toppings: banana, yogurt, cottage cheese, nut butter, cacao nib

METHOD

Preheat oven to 375 degrees F.

Grease an 8x8 or 9x9 baking dish with some melted coconut oil or butter

Combine baking powder, cinnamon, cardamom, and salt in a medium-sized bowl

Stir in oats and 1/4 cup of chopped nuts

In a separate bowl, whisk together egg, maple syrup, vanilla, milk, and butter/oil

Spread 1 cup of the berries and 1 cup of apples and pear on the baking dish

Pour oat and nut mixture on top of fruit

Pour wet mixture over the oats and fruit

Sprinkle the rest of the berries, apples and pears, sliced banana, nuts, and coconut.

Bake for about 35 minutes and enjoy!
