Watermelon, Feta, and Mint Skewers

INGREDIENTS

good chilled watermelon
fresh feta (I like the sheep’s milk feta from @traderjoes in the blue container)
mint
lime
olive oil
flakey sea salt
pepper
optional drizzle: reduced balsamic or pomegranate molasses

METHOD

1. Cut watermelon into cubes/rectangles.
2. Cut feta into smaller pieces.
3. Place a slice of feta onto watermelon followed by mint.
4. Squeeze lime. Drizzle with olive oil and sprinkle with salt and pepper.
5. Poke with a skewer and ENJOY.
