“Aroma”-Inspired Salad with Feta and Za’atar

INGREDIENTS

Romaine lettuce, chopped

Persian cucumber, diced

Tomatoes, diced

Red onion, diced (optional)

Fresh mint, chopped

Sheep’s milk feta cheese, shredded or crumbled (omit or sub with vegan feta to make vegan)

Za’atar

Sumac

DRESSING INGREDIENTS

Lemon juice

Red wine vinegar

Olive oil

Dijon mustard (optional)

Sea salt

Pepper

METHOD

  1. Prepare salad dressing. Place dressing ingredients into a jar/bowl and shake/whisk well. Taste and adjust for seasoning.

  2. Place lettuce, cucumber, tomato, mint, and onion into a bowl. Pour some dressing and toss well. Taste and adjust for seasoning. Sprinkle with feta, za’atar, and sumac. Enjoy!
