Simple Roasted Beets

INGREDIENTS

Red or golden beets, top and bottom trimmed and scrubbed very well

Olive/avocado oil

Sea salt

Lime/lemon juice (optional)

METHOD

  1. Preheat oven to 400 degrees F and line a baking sheet with parchment paper.

  2. Place cleaned beets on the baking sheet, drizzle with oil, and sprinkle with salt.

  3. Roast in the oven for 45-60 minutes (depending on the size of your beets) or until a knife easily slides into the center of the beet.

  4. Slice the beets. Garnish with more olive oil, lime/lemon juice, and flakey sea salt (optional). Enjoy!
