Asparagus Salad with Mint, Dill, and Parmesan

INGREDIENTS

asparagus

mint, torn

dill, chopped

parmesan

salt

pepper

my go-to salad dressing (or lemon juice and olive oil)

hemp seeds (optional)

lemon zest


METHOD

Cut off about 1 inch of the asparagus ends.

Place a steamer basket in a pot and fill with 2-inches of water. Place asparagus into the pot with the lid. Turn the heat on and steam until the asparagus is just cooked but still crunchy.

Cut the asparagus into 2-inch spears and place in a large bowl. Toss with mint, dill, parmesan, lemon zest, and salad dressing.

Taste and adjust for seasoning. Garnish with lemon zest, hemp seeds, and a squeeze of lemon.
